Daring Bakers: Baklava and phyllo dough -becoming Baklava Pancake (gluten-, sugar-, lactose free)



Erica of Erica’s Edibles was our host for the Daring Baker’s June challenge. Erica challenged us to be truly DARING by making homemade phyllo dough and then to use that homemade dough to make Baklava.

I have tried the original recipe by Erica for the dough, but since I am gluten allergic and living a paleo lifestyle, I tried and substituted rice flour to all purpose flour. Well, I got rice pasta, which did not soak up any of the syrup I made. It was a learning experience, but I liked the idea of working with rice flour, and I knew that pancakes are perfect with it, so I tried to make rice flour pancakes my way. It's been a pure success. It does not soak up the given amount of syrup still, but it soaks up enough to have a natural sweetness. It is not that thin and crispy, it is rather thick according to phyllo dough, but it goes really well with the whole walnut-honey theme. Very satisfying. Moreover satisfying that I didn't have to turn on my oven. The whole preparation was pure jammin'...just listening to some Bob Marley, flipping 4 pancakes, some this some that... I could live with it every day. 
I did not make a syrup like the given recipe instructs, I left out the sugar, but later on I realized that I don't even need the water, so it is just honey warmed up with spices and some fresh lemon juice. It is not entirely that sweet as the original, but I liked it better this way. It tasted natural. Satisfying. I am definitely going to make this again.

Paleoliscious! (only flaw is that rice is not paleo, but we loved it...so sue me!)

Since I didn't make the original recipe, I am going to give you my version. So here it goes:

Ingredients for the Pancake:
20 dkg rice flour
2,5 dl water
2 eggs
3 tbsp oil

Mix everything in a bowl, let it chill in the fridge for 30 min, and go! But be aware: it you are using a spatula to flip it, it is going to break for sure, so instead just flip it in the air.


Ingredients for the syrup:
40 dkg honey
1 cinnamon stick
3 cloves
a pinch of ground nutmeg 
3 tbsp lemon juice

Put and pour all ingredients in a pot bringing it to boil, then cook it for 10 min on low heat. 

For the Baklava:
approx. 12 tbsp ground walnuts

Assembly of the Baklava Pancake:
Put one freshly baked, hot pancake in the chosen pan and pour over the walnuts, approximately 4 tbsp. Then comes another pancake, another layer of walnuts, and another pancake and another walnut layer and a last layer of pancake. So four layers of pancake and 3 layers of ground walnuts. 
Cut it with a knife very carefully, constantly pressing down the dough with fingers and palm. When done, pour over the hot honey through a strainer. Let it chill, then keep it in the fridge.

  4. Ha jól emlékszem 4 vagy 5 vastag szelet, de ebből egy palacsinta torta lett.

    Nagyon szívesen kipróbálnám ezt a receptet, de sajnos hiába kattintok a magyar nyelvű receptre mutató hivatkozásra, hibát ír ki. Tudnál esetleg ebben segíteni?
